Choc Chip Muffins

 

2 cups self raising flour

1/3 cup cocoa

1 cup brown sugar

150 g butter melted

2 eggs

3/4 cup milk

1 tsp vanilla essence

1 cup dark choc bits (175g)

 

  1. Pre heat oven to 180°c
  2. Sift flour, cocoa, and sugar into large mixing bowl and make well in centre.
  3. Whisk butter, eggs, milk and vanilla with a fork. Pour into dry ingredients.
  4. Gently fold together with spatula until just combined. Do not overbeat. Stir in chocolate chips.
  5. Spoon into muffin tray. Bake for 20 minutes. Leave in tin for 5 minutes.
