Fudge brownies

 60g unsalted butter

100g cooking chocolate

2 eggs

150g caster sugar

1/2 tspn vanilla essence

70g plain flour

60g walnuts chopped

Icing sugar (sifting)

 

1. Melt butter & chocolate over low heat. Allow to cool

 

2. Beat eggs until pale & fluffy. Add sugar, beating until mixture is thick & creamy. Add cooled chocolate and vanilla and stir until well combined. Sift flour over walnuts and fold into mixture. Pour into 20cm square non-stick pan

 

3. Bake in a 170° oven for 20-25 minutes. Let cool in pan, cut into squares and sift icing sugar on top.
