Choc Chip Muffins
2 cups self raising flour
1/3 cup cocoa
1 cup brown sugar
150 g butter melted
2 eggs
3/4 cup milk
1 tsp vanilla essence
1 cup dark choc bits (175g)
- Pre heat oven to 180°c
- Sift flour, cocoa, and sugar into large mixing bowl and make well in centre.
- Whisk butter, eggs, milk and vanilla with a fork. Pour into dry ingredients.
- Gently fold together with spatula until just combined. Do not overbeat. Stir in chocolate chips.
- Spoon into muffin tray. Bake for 20 minutes. Leave in tin for 5 minutes.
